Avocado Pesto Sauce

This week, we asked our good friend, Rylee to show us one of the countless things she does well in the kitchen — PESTO! This is a super delicious and quick weekday meal full of healthy fats and perfect to serve crowds who are gluten-free, dairy-free, and vegetarian. 

The best part is that it only takes 5-10 minutes to put together. Gnocchi cooks in 2-3 minutes and the sauce is blended all at once in just a few seconds. It might be the quickest and most innovative meal you will make all week.

Gnocchi and Avocado Pesto (10 minute meal)

For Two Servings


  • 1 Ripe Avocado
  • 2 Large Basil Leaves
  • 1 Garlic Clove
  • Juice of Half a Lemon
  • 1-2 Tablespoons Olive Oil
  • Water As Needed
  • Salt & Pepper to Taste
  • Box of Cherry Tomatoes
  • Parmesen 
  • Gnocchi


  1. 1. While boiling the gnocchi, combine avocado, basil, lemon juice, and garlic. Add olive oil to thin out. Add additional water if you would like a thinner sauce. 
  2. Season with salt and pepper.
  3. Pour sauce over gnocchi.
  4. Cut cherry tomatoes and toss into the gnocchi.
  5. Top with parmesan.

Extra Fun Tip: Instead of adding raw tomatoes, roast the cherry tomatoes with minced garlic, salt, and pepper for 10 minutes on high and toss with the gnocchi. I love both the fresh and roasted tomatoes... I can't decide which I like more. — Rylee
